Royal Icing & A Two Year Old

It has been a long day. Maybe it’s just me, but I’m pretty sure my 2 year old had it in his head that today was the day to torment me. (I’ll just tell you that the highlights involved water, mud, and tipping over my newly planted pot). I’m sure I deserved it. (Was I not paying attention?) Probably not. (Obviously not.) But still. I’m so tired. It might help if he would sleep. You know, just a few hours (heck, what about a half hour) during the day…and then calmly drift to sleep at a reasonable night time hour. “HA! No way mom. In your dreams. If I take a nap (oh and you’ll be lucky if I will) then I’ll make sure to stay awake until at least 11:45 and if I don’t take a nap…well, I’ll start acting a little tired around 6, get your hopes up that I might go to bed early, and then surprise you by staying awake until almost 9. he he. Sucker!” …anyhow, I’m pretty sure that is basically what he is thinking. basically. yup.

Anyhow, I’m also not quite sure what I was thinking when I said yes when my mom asked if I would be in charge of finding a cute way to frost the sugar cookies we are going to be making for my sister’s wedding at the end of July. Huh? Yeah. Sure. Oh no. Did I say yes? Sounded fun until I remembered that said 2 year old has been a bit of a handful lately…or maybe more like a wheelbarrow full.

Well, needless to say…with 2 year old on the counter eating dough, and sucking frosting out of my frosting bags, I did manage to get a few test cookies done. They didn’t turn out perfect, and WOW, who knew there was so much to learn about cookies, (thank you Bridget at Bakeat350 for your awesome youtube videos and tutorials)…But, being my first time using royal icing and all, I think they turned out pretty darn good. I’m happy. Not sure about making 400 of them…but I’m happy right now.

This past month has been crazy. On the 19th of May we were able to finally move into our new house, (insert shouts of joy here) and then on the 21st (yup, just 2 days later) I did the wedding flowers for one of my best friends from high school. It was a pretty insane weekend trying to get all moved in, and unpacked, and settled, as well as do flowers. Needles to say, it has also been a pretty insane month since I am only barely finding a few minutes to show off some pics…

McQueen Cupcake Cake

The Lightning McQueen Road Cake

Back in April my son turned 2 years old. (eeek! It has gone by way too fast!) We were a tad bit busy since we were right in the middle of building our house,but I still wanted to make a fun cake even though I had practically no time. I got it in my head to make a Lightening McQueen Cake since Emerson is such a huge fan of the movie Cars. So this is what I finally came up with. It was easy, and fast, and turned out better than I envisioned. YAY, I love it when it works out like that don’t  you!?!

You will need:

  • 2 Cake Mixes
  • Cupcake Liners
  • Black Frosting or MAKE YOUR OWN
  • White Frosting
  • Frosting bag & appropriate tip (or use a plastic ziplock bag with a corner cut off)
  • Assorted Disney Pixar CARS (these can be found at Walmart or Target for $3.50 ea)

STEP 1: Make 2 Dozen Cupcakes. Each cake mix will make 1 dozen cupcakes. Instead of filling the cupcake liners 3/4 of the way full…go ahead and fill them all the way to the top. They will cook more like a muffin with a large top…yum. More = Better I always say:

Step 2: Frost your cupcakes with a nice, dark, creamy, smooth, thick layer of yummy black frosting:

Step 3: Add your white road lines. If you are fancy you can use a frosting bag with a nice tip…or if you are like me you can just fill a ziplock bag up with one of the corners cut off. Either way, it should look something like this:

Step 4: After you have frosted all 24 cupcakes, line them up side by side down the center of your table, and place your cars on top so it looks like they are driving down the road. You can arrange them however you like. I made mine twist and turn around the food we were serving for his Birthday dinner like this:
